A native of Joliette, Gary spent his childhood and teenage years in Lebanon. He returned to Quebec in 1990 and acquired his first job as a server in a restaurant. Then he landed a job as a server at the Guy et Dodo restaurant in downtown Montreal that changed his life. With his curiosity and keen interest in cooking, Guy invited Gary to step behind the counter and work in the kitchen. He immediately developed a passion for cooking and enrolled at the ITHQ (Institut de tourisme et d’hôtellerie du Québec) and graduated as a professional chef. Since then, he has worked as a chef in several of Montreal’s top restaurants, specializing in Italian, Belgian and French cuisine.

Gary enjoys working with fresh and varied products according to seasonal arrivals. He is a proud member of the MAA Club Sportif for many years and is an avid squash player and spinning enthusiast.  Gary was thrilled by the opportunity to operate a restaurant in “his Club” and create a special and much-appreciated meeting place for his MAA family.

We are very proud and happy that Gary is foremost a loyal member of the MAA, as well as a renowned chef who is appreciated everywhere. Under his leadership, Le 1881 Restaurant will be a special place for members and non-members alike, and an integral part of this new chapter of the MAA!
